Absolutely recommend the South Coast, Purbecks, Poole Bay, Studland, Corfe etc .....you may want to B&B a little way out as it can be very expensive. Not really technical, just great riding and views, nice for the beginner.
Loads to do and see if the bike gets a bit to much as well, Monkey World < Winner!
http://www.bankesarms.com/ well worth a visit as well, you can ride on from here right across old Harry and down into Swanage (hilly)
Check these guys out ..
http://www.dorsetroughriders.com/ They maybe able to help with routes etc.

Re: need help with ideas for weekend away
Llandegla could be and option there is the black, red, blue and green trails so a good mix all share the same first climb.
Im not sure what level your other half is but the blue trail isn't too difficult.
The red has a few tricky bits that a novice may find a bit scary,a couple of bits that are a bit of a steep climb plus section of northshore that shocks most people who see it for the first time
The black is just a longer version red there isn't anything more scary on it other than a big bit of northshore and a lot more climbing
Do the blue route see how you get on and play it by ear. Very nice food in the cafe if you only do the one trail.
Some people I have known do the blue run together go have some lunch then go back out do the climb together then one does the blue again while the other does the red.
I can't help with B&B as I stay with my brother when I go up that way but Llangollen, Wrexham, Ruthin are not far away.

Re: need help with ideas for weekend away
Plenty of places to stay in and around Llangollen and if you want to camp there is a site next to Valle Crucis Abbey. The Abbey is well worth a visit if you like that type of thing.
Theres lots to do and see around there if you get bored of the trails.
2-3 hours drive from MK.

Re: need help with ideas for weekend away
Depends on the traffic
I tend to get up early as the M6 can be a bit sticky its 170 miles for me to my brothers in Wrexham normal takes about 3 hours taking it easy.
Will be a bit less for you as I travel from down here in Hemel.
Its an easy journey M1, M6, M54, A5, A483, A525.
Look out for camera van when you get on the single carrageway after the Shrewsbury ringroad there is sometimes one parked on the bridge.
